Length of time that funds stay in Escrow

How long do funds stay in escrow when buying a business? My assumption was that I would need to transfer the funds into escrow a day or two before the closing of the transaction.

I have read that this may be a longer period and up to the bank. It would be great to hear from people that have been through the process.
