Anyone with experience in fast-casual restaurant franchises?

I just came across an owner that operates 3 restaurants and has spent the last 5 years standardizing and measuring all his processes to grow under a franchise model (locally in the Dominican Republic and he also plans on opening his 1st retail location in Miami). I have no idea how to evaluate his (and the business') capability to really expand and grow this idea. He is looking for funding to make the big jump and offer his franchise model to new owners (and grow internationally). Any help on this is greatly appreciated!!
