I've evaluated a number of small retail food establishments in the past... most recently a frozen desserts shop for 600K that was doing 325k cash. I ended up pausing on the deal as I'm a dad of a toddler, and though there was a lot of room and cash to hire a GM, it just felt like these are hard to truly operationalize without being on call nights/weekends.
