We are looking to hire several unpaid interns. However, it looks like many universities won't accept the practicum for course credits.

The government outlines what is acceptable unpaid internship in this document. It does look like it is within the legal boundaries if both parties (i.e. employer and intern) clearly understand that it is unpaid.

Does anyone have a contract that they use for hiring unpaid interns?
