SaaS Ops subject is hudge, SOP's - to establish, I would Look for software that SaaS organizations utilize. Of course, there will be a service desk, knowledgebase, and operational software that can be configured for best-of-breed operational templates from which you can select. Hiring a Services and Delivery consultant for SaaS will be VERY Important. This would set you up correctly the first time, so when a company staff uses it, they just need to learn it and reduce the number of tweaks as they go along.
Books and training are fine, but ultimately you need to find software to manage the entire process, and fit their templates and processes into your business - this is the best chance for success.
