Why wouldn't a business like this be easily displace by AI?

I don’t see it the same way. Without writing a long treatise: (1) the AI tools are not as developed/useful as one might think. They still require a great deal of manual finagling. And (2) resume writing businesses are not targeting the person who has the time to spend hours with AI. The customer is the person who doesn’t want to spend hours with AI on their resume.
