Offering consulting to SMBs: using AI to streamline business processes

My background is in data science and ML, and I work on a services business with a couple partners on the side during my search. We have seen a large amount of demand for AI consulting to automate or streamline business processes, both from small/medium business owners as well as lower middle market PE, and have worked on both assessments as well as implementations.

What sorts of tools have you seen used for successful implementation in lower middle market? Custom software hitting LLMs via APIs like OpenAI or Anthropic? Or have you been seeing self deployment/hosting of open LLMs?
