Came across a video on YouTube yesterday about Hundredweight Big Ice which specializes in making high-end, hand-cut ice specifically for cocktails. Seems like a great business: bars in NYC will always need ice, and the switching costs must be very high given the sensitivity of the product. I doubt that the owner Richard Boccato would ever want to sell, but I'm curious if anyone's ever looked at similar businesses elsewhere.

I think low switching cost - all ice is the same. People also dont go to bars for the ice, so bars are less likely to pay a premium. And how would you grow this business?

I think the reliability is what does the trick. As a high end bar, I would probably care more about the stability and quality of supply vs. cost. Growth is an interesting question -- I imagine luxury bars in New York see their demand grow at a moderate pace?
