Finally got a deal under APA! Immediately Hiring an Admin or Operator?

After searching part time for nearly two years (I already own another successful seasonal small business) I have landed a great deal on an apartment turnover service! Re-occuring revenue, 100 different commercial clients, solid financials, long term tenured team of 16! Very excited!
I am replacing a husband and wife team, both of whom claim to only work about 30 hours a week. However, I know to expect someone new like me to double that, and I of course intend to be there overtime for the first year at least. Just learning the ropes, the ins and outs, making sure the strong history continues, learning the trade etc.
The husband goes out to the jobs to manage the paint/cleaning/carpet crews, and wife manages the books. I don't really have too much clarity on exactly what that entails, as I know that two other family members also take care of the A/P, receivables, etc. My original plan was to replace her as the finance person, and hire someone to be the overall manager of all the crews. Oh, and I did find a retiring licensee to qualify for the contractor's license, but he's not involved in any day to day direct operations.
Any advice on the first hire I should make here? Any tips on sussing this out more during due diligence over the next couple months? Appreciate the support!
