Employment contract protection

I'm negotiating a deal at the moment and need the current owner to stay working full time for 2 years after the sale. What protections can I build in to the purchase agreement and employment agreement to ensure he stays for 2 years? If he decides to leave after 3 months it will be a disaster so I need some kind of guarantee and protection against him leaving early.
