Does anyone have experience with wholesale butcher shops?

I'm evaluating a deal involving a regional wholesale butcher. I'm looking for some guidance on appropriate valuation multiples to consider along with feedback from anyone who may have experience with transactions involving family owned/operated businesses which retained some (not all) of the original owners post close. Trying to identify some creative structures/options that may be good considerations in this situation. Any suggestions/ability to connect would be appreciated. Thank you!
