Can anyone recommend a robust yet affordable software to manage worflow with interns?

1) Trello, as mentioned here, is great for simple workflow and process management.
2) Clickup is the project management system I just started using for more robust, permissioned streams of work.
3) Process.st is incredibly powerful for full-on checklist and SOP workflows: https://www.process.st/
We are building out our intern program right now, but I plan to move us toward process.st in the long-term. It's a very powerful tool when configured correctly.
