Anyone has experience acquiring a small food establishment?

I’m looking to learn more about fast and “not-so-fast” food shops in Florida — places like sandwich, pizza, or burger shops. I’m not referring to full-service restaurants, but rather what I’d call assembly-style food operations, where the staff primarily assembles orders instead of cooking each dish from scratch. Does anyone here have experience acquiring or running this type of business? I’d love to understand the complexity, profitability, and level of day-to-day involvement required. Also curious — is it realistic to operate one of these shops as an absentee or semi-absentee owner? Has anyone here found success doing that? Lastly, I’d appreciate insights on which business models tend to perform best in this space and which ones to avoid — and why.

I generally don't think it is a good idea to be semi-absentee ever but especially with retail businesses. I still think it is good to have some level of hospitality experience even if it is more simple than a full service restaurant.
